Ingredients
- 1 1/2 Tablespoons oil
- 1/2 cup chopped onion
- 1 Tablespoon curry powder
- 1 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground red pepper
- 1/2 cup apple juice
- 1 cup chopped mango
- 1/2 cup chopped peach
- 1/2 cup chopped apple
- 1/3 cup raisins
- 1 teaspoon cider vinegar
- 1/2 teaspoon salt
- 3 cups cooked brown rice
- 1/3 cup chopped walnuts
Preparation
Step 1
In a 2 quart saucepan, heat the oil over medium-high heat. Add onion and cook, stirring, until softened. Remove from heat and stir in the curry powder, ginger, cloves and red pepper until absorbed. Stir in the apple juice. Add mango, peach, apple, raisins, vinegar and salt. Cook uncovered until fruit is cooked and mixture is thickened, about 5 to 7 minutes. Stir in the rice and walnuts.
