Glazed Sweet Potato Casserole

Ingredients

  • 6 med sweet potatoes
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup honey
  • 1 Tbs cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp grated orange rind
  • 2 tsp butter
  • 1/2 cup pineapple juice
  • 1/4 cup chopped walnuts or pecans

Preparation

Step 1

Cook sweet potatoes in boiling water to cover 20 - 25 min or until fork tender. Let cool to touch, peel and cut into ½ inch slices. Arrange slices in lightly greased 12x8x2 inch baking dish; set aside.
Combine brown sugar and next 7 ingredients in a saucepan. Cook over med heat, stirring constantly, until mixture begins to boil; boil 1 minute, stirrling constantly until mixture is thick and bubbly. Pour over the sweet potatoes; sprinkle with chopped walnuts or pecans. Cover and refrigerate 8 hrs.
Remove dish from refrigerator and let stand 30 min. Uncover and bake at 350 degrees for 30 minutes or until thoroughly heated.
Makes 8 servings plus.

I throw on mini marshmallows the last 5 min.
