Peanut Chicken

Ingredients

  • 2 12 ounce cans honey roasted peanuts
  • 1 cup soy sauce
  • 1/3 cup lime juice
  • 1 can cream of coconut
  • 3 pounds boneless chicken breasts

Preparation

Step 1

Coarsely chop one can of peanuts and set aside. In a food processor, pulverize the other can of peanuts into a paste and add soy sauce, lime juice and cream of coconut. Continue processing until sauce is well blended. Take 1/2 cup of the mixture and pour over chicken. Marinate for 1 hour. Reserve the rest for later.

Broil chicken strips on baking sheet for 15 minutes, turning after 10. When cool, pierce with skewers. Dip skewers into reserved marinade mixture and roll in chopped nuts.
