Awesome turkey soup for cold days! Makes good use of leftover turkey!

Ingredients

  • 4 qts. Swanson Chicken Broth
  • Leftover succotash (limas, corn, bacon and onion)
  • Leftover turkey (dark meat) cut and torn into small pieces
  • 5 stalks celery (chopped)
  • 1 medium onion (diced)
  • 1 16oz. bag frozen peas and carrots
  • 3 15oz cans S&W dried tomatoes, undrained
  • salt and pepper
  • 8 oz uncooked egg noodles

Preparation

Step 1

Add 3 qts chicken broth to large stock pot.
Add all other ingredients, except noodles
Simmer for 40 minutes, stirring occasionally
Add salt and pepper to taste
Add egg noodles and continue to simmer for 20 minutes more
If stock pot has the room, add remaining qt. of chicken broth; otherwise add remaining chicken broth after serving a few bowls!
