Ingredients

  • 6 Tablespoons butter
  • 1 cup flour
  • 1 cup cornmeal (I like to use Bob’s Red Mill Corn Grits/Polenta)
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 can creamed corn
  • Tabasco and freshly grated black pepper
  • 2-3 green onions, chopped
  • 1 cup grated cheddar cheese

Preheat oven to 375 degrees.

Place butter in a 10 inch cast iron skillet and put in oven to melt.

Mix together the flour, cornmeal, sugar, baking powder and salt.
Toss the green onions and cheese together with the dry ingredients.

In a separate bowl whisk the eggs and add the creamed corn and mix well. Add several dashes of Tabasco and several grinds of black pepper and mix well. Stir egg/corn mixture into the dry ingredients and mixing just until everything is combined.

Remove the hot pan with the melted butter from the oven and carefully pour in the cornbread mixture. You may have to stir in some of the melted butter. Return to the oven and bake for 25 minutes or until done when brown on edges and pulling away from the side & firm to the touch. Serve immediately with butter and honey. Enjoy!
