Marinated Salami

Ingredients

  • 1 2 pound salami
  • 2 cups apricot preserves
  • 1 cup Dijon mustard

Preparation

Step 1

Using sharp knife, score salami well and place in greased pan. Combine apricot preserves and mustard. Pour over salami. Cover pan and refrigerate for 6 to 12 hours, turning occasionally.

Bake salami at 350 for 2 hours, basting and turning every 30 minutes. Remove from oven and let stand for 10-15 minutes. Slice salami at an angle into 1/2 inch slices. Return slices to marinade in pan. Bake uncovered for an additional 40 minutes.
