Pineapple Upside Down Noodle Kugel

Ingredients

  • 8 ounces medium noodles
  • 3 Tablespoons margarine -- melted
  • 6 eggs -- beaten
  • 3/4 cup sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1 can pineapple slices
  • 1 cup pineapple juice, drained from can
  • maraschino cherries
  • 1/2 cup brown sugar

Preparation

Step 1

In a 4 qt. pot of boiling water cook noodles until soft, 12 to 15 min. Rinse and drain. Set aside to cool, 15 min. In a large bowl, combine noodles, margarine, eggs, sugar, lemon juice, salt and pineapple juice.

Preheat oven to 350. In a well-greased 9-inch square pan, place three rows of three pineapple slices each. Put a maraschino cherry in the center of each slice and sprinkle with brown sugar. Pour noodle mixture over pineapples and bake for 40 min. Cool in pan. Turn out onto plate to serve.
