Ingredients
- shallot, finely chopped OR:
- 1/3 cup dried apricots
- 11/2 cups water
- 1 green onion, finely chopped
- 1/2 cup tarragon vinegar
- 1/4 cup honey
- 1/4 cup catsup
- 3 tablespoons vegetable oil
- 1/2 teaspoon soy sauce
- 1/2 teaspoon leaf oregano, crumbled
- 1/2 teaspoon salt Vi teaspoon pepper
Preparation
Step 1
1. Combine apricots and water in sauce
pan. Bring to boiling. Lower heat; simmer
25 minutes, until tender. Cool slightly.
2. Drain apricots over measuring cup. Place
apricots and 1 cup of the drained liquid
(add water, if necessary to make Yi cup)
in container of electric blender or food
processor. Cover; blend until smooth.
3. Combine apricot puree and all the re
maining ingredients in medium-size
saucepan. Bring to boiling. Remove from
heat. Refrigerate cooled sauce in tightly
covered container for up to 2 weeks.
