Ingredients
- 1 1/2 pounds pork tenderloin
- 1/2 teaspoon salt
- 2 cups apple juice
- 1/2 cup apple butter
- 1/4 cup firmly packed brown sugar
- 2 Tablespoons water
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
Preparation
Step 1
• Prick tenderloins several times with a fork; sprinkle with salt, and place in an 11x17 inch baking dish. Add apple juice; cover and let stand at room temperature 30 minutes, or chill 2 hours.
• Bake at 350 degrees for 15 minutes, and drain.
• Stir together apple butter and next 4 ingredients. Brush over pork, and bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 160 degrees. Let stand 15 minutes before slicing.
• NOTE: If tenderloins are chilled 2 hours, let stand at room temperature 30 minutes before baking.
• Yield: 4 servings.
• Time: Prep: 5 min., Marinate: 30 min., Bake 30 min.
• Menu suggestion: rice pilaf and steamed zucchini
