Corn Muffins

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine -- softened
  • 1 cup milk
  • 1 egg -- lightly beaten

Preparation

Step 1

Preheat oven to 400. Grease muffin cups.

In a large bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Add butter and mix until crumbly.

In a separate bowl, mix milk and egg. Fold liquid mixture into flour mixture. Spoon mixture into muffin cups, filling them to the top.

Bake for 25 minutes or until center comes out clean on a toothpick. They will not get very brown on top.
