Ingredients

  • Cookie:

  • 2

    c. brown sugar

  • 1

    c. shortening

  • 3

    eggs

  • 1

    t. vanilla

  • 4

    c. flour

  • 1

    t. cinnamon

  • 1/2

    t. salt

  • 1

    t. baking soda

  • Filling:

  • 1

    # ground dates

  • 1/2

    c. finely chopped nuts

  • 1/2

    c. sugar

  • 1/2

    c. water

Directions

Mix all cookie ingredients together to form a dough. Divide dough into 3 equal parts; roll out onto wax paper in oval shapes, being sure to keep dough fairly think or else filling will break through dough. Cook ground dates, nuts, sugar and water together until thick. Spread filling on dough, then roll like jelly roll. Place in refrigerator until chilled. Slice about 1/2 inch thick. Bake at 375 degrees for 10-12 minutes.
