Red Quinoa Fruit Salad

This is one of my favorite salads, refreshing and easy to make. Excellent served with grilled chicken or salmon and I love to eat it for breakfast, lunch or dinner.

Ingredients

  • For the Salad:
  • 1 cup fresh blueberries or strawberries
  • 1 fresh pineapple, peeled, cored and chopped
  • 4 apples chopped
  • 2 small cans mandarin oranges, drained
  • 2 bananas, sliced
  • 1 cup pecans, lightly chopped
  • 2 cups cooked red quinoa
  • For the Dressing:
  • 1/2 cup Flax oil or coconut
  • 1/2 cup Olive oil
  • 1/2 Honey or Xagave
  • 2/3 cup Golden Balsamic vinegar

Preparation

Step 1

For the Dressing: Whisk with dash of salt and 1 teaspoon nutmeg, and 1 tablespoon fresh grated ginger.

For the Salad: Toss all ingredients in large bowl and toss with fruit dressing.
