Garam Masala

Ingredients

  • 1/2 cup coriander seeds
  • 1/4 cup cumin seeds
  • 27 pods of green cardamom
  • 6 bay leaves
  • 11 pods of black cardamom
  • 20 cloves (whole)
  • 7 blades of mace
  • 10 inches of cinnamon stick
  • 2 star anise
  • 1 tbsp fennel seeds
  • 1 tsp black peppercorns
  • 1/2 tsp nutmeg (grated)
  • 1/2 tsp salt

Preparation

Step 1

1) Put all ingredients in a pan and lightly roast the mixture.
2) Let cool and grind mixture to a fine powder in blender.
3) Pass through a sieve.
4) Store in an airtight jar.
