Slow Cooker Beef Barley Soup Recipe

I love the soup but I added mushrooms to the recipe just because I like mushrooms. You can eliminate them if you don't.

Ingredients
- 1-1/2 pounds beef stew meat
- 1 tablespoon canola oil-for browning the stew meat
- 1 (14.5 ounce can) diced tomatoes
- 1 cup chopped onions
- 1 cup diced celery
- 1 cup sliced fresh carrots
- cup chopped green pepper
- cup sliced Mushrooms
- 4 cups beef broth
- 2 cups water
- 1 cup tomato sauce
- 2/3 cup medium pearl barley
- 1 tablespoon dried parsley
- 2 teaspoons salt
- 1-1/2 teaspoons dried basil
- teaspoon black pepper
Preparation
Step 1
In a large skillet brown the stew meat.
Combine all ingredients in a 5 quart slow cooker, cover and cook on low for 9-10 hours.
