Red Quinoa Coconut Yams

These are the best yams I have ever eaten. I love the quinoa topping. It is a family favorite.

Ingredients
- Topping:
- 3 cups mashed, cooked sweet potatoes or yams
- 1 cup sugar
- 1/2 cup half & half
- 1/2 cup butter
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 cups cooked red quinoa
- 1 cup coconut
- 1 cup chopped pecans
- 1 cup dark brown sugar
- 1/3 cup whole grain flour
- 1/3 cup melted butter
- Pinch of nutmeg
Preparation
Step 1
Mix all of the ingredients together in a large bowl. Spread evenly in an oven safe baking dish that has been sprayed with non stick cooking spray. Top the potatoes with the quinoa nut topping and bake in a 375 degree oven for 35 minutes.
Topping: Melt the butter. Stir in the flour, sugar, nuts, coconut, and nutmeg. Mix together with the cooked red quinoa. Place on top of potatoes.
