Old Fashion Cornbread with Quinoa

I love quinoa in cornbread, it gives it a moistness that is so charming and the crumb is so tender.

Ingredients

  • 2 cups freshly ground popcorn
  • 2 cups WonderFlour™ or spelt flour
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 1-2 cups cooked white quinoa
  • 1 ear of corn, roasted, kernels removed
  • 2 1/3 cups buttermilk
  • 2 eggs
  • 1/2 cup butter
  • 2 Tablespoons baking powder

Preparation

Step 1

Mix all ingredients in a bowl, whisking together till just combined. Preheat oven to 375-400 degrees (depending on how hot your oven runs). Place batter in a sprayed baking dish and place in oven to bake for about 15-25 minutes.
