Ingredients

  • 2

    C all purpose flour

  • 2

    tablespoons ubsweetened cocoa powder

  • 1/2

    teaspoon baking soda

  • 1/4

    teaspoon salt

  • 1/2

    C butter, softened

  • 1

    C packed brown sugar

  • 1

    egg

  • 1

    teaspoon vanilla

  • 1/2

    C buttermilk

  • 1-1

    oz bottle red food coloring (2 tablespoons)

  • Filling:

  • 1/4

    C softened butter

  • 4

    oz softened cream cheese

  • 7

    oz jar marshmellow cream

Directions

1. Preheat oven to 375 F 2. Line baking sheets with parchment paper. 3. In a medium bowl combine flour, baking soda, cocoa and salt. Set aside. 4. In a large bowl beat butter, add brown sugar, beat until light and fluffy. Add eggs and vanilla. Alternately add flour mixture and buttermilk. Stir in food coloring. 5. Spoon batter onto parchment: 1 inch diameter rounds 1/2 inch high and 1 inch apart 6. Bake 7-9 mins. Cool completely on sheets on wire rack. Filling: 1. Beat 1/4 C softened butter and 4 oz of cream cheese until smooth. Fold in marshmellow cream. Store in air tight container in refrigerator for up to 4 days.
