Ingredients

  • 1 (14 oz) can artichoke hearts, drained & chopped
  • 1 (8 oz) container sour cream
  • 1 cup mayonnaise
  • 3 Tbsp. finely chopped onion
  • 1 tsp. lemon zest
  • 1 Tbsp. fresh lemon juice
  • 1 (1 oz) envelope vegetable soup mix
  • 1 (10 oz) package frozen chopped spinach, thawed
  • Freshly ground pepper to taste

Preparation

Step 1

Stir together first 7 ingredients in a large bowl.
Drain thawed spinach well, pressing between paper towels; stir in artichoke mixture.
Season with pepper to taste. Cover and chill 30 minutes to 2 days.
