Ingredients
- 2 whole chickens -- cut up
- 1 head garlic
- 1/4 cup oregano
- Pepper -- to taste
- Salt
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1 cup prunes -- pitted
- 1/2 cup olives -- pitted
- 6 bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/4 cup Italian parsley -- chopped
Preparation
Step 1
Combine garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, and bay leaves. Pour over chicken and marinade overnight in refrigerator.
Preheat oven to 350. Arrange chicken in single layer in 2 pans. Spoon marinade and fruits over. Sprinkle with brown sugar, wine and parsley. Bake 1 hour; baste frequently.
