Ingredients
- 12 Eggs
- ⅓ cup water
- 3 Tbs. unsalted butter
- 4 green onions, thinly sliced diagonally
- 1 or 2 pinches of salt
- 1 cup grated cheddar cheese
- 8 oz. bacon, cooked until crispy and
- Roughly chopped
Preparation
Step 1
In bowl, lightly whisk eggs and water until blended. Set aside
In large nonstick fry pan over medium heat, melt 1 Tbs. butter. Add green onions; sauté until soft, 2-3 minutes. Transfer to bowl.
In same pan, melt 2 Tbs. butter, swirl in pan until it foams. When foam subsides, add eggs; season with salt. Using spatula, quickly and lightly stir eggs in small circular motion until most of liquid has cooked off but eggs are not completely solidified, 7-10 minutes. Sprinkle cheese, bacon and green onions across half of omelette.
Holding handle of pan in one hand and serving platter in other, tip pan forward, toward platter. Slide filled half of omelette onto platter; invert pan to fold omelette in half. Serve immediately.
