VEGETARIAN CHILI

Ingredients

  • 1 Onion (red or sweet onion)
  • 2 Cloves garlic
  • Diced Carrots
  • Diced Celery
  • 1 Can of pinto, kidney and Black beans drained
  • 1 Large can of fire roasted tomatoes
  • 1/2 Bunch fresh cilantro
  • 1 Bunch scallions
  • 1 Tablespoon each cumin/coriander/chili powder.

Preparation

Step 1

1. Sautee onion, garlic, carrots and celery until soft.
2. Add cumin, coriander, and chili powder and cook for 2-3 minutes.
3. Add 1 large can fire roasted tomatoes and pinto, kidney and black beans.
4. Cook on medium to low for 20 minutes.
5. Finish with fresh cilantro chopped and diced scallions.
6. Add S&P to taste.
7. Serve over brown rice.
