Tart and Tangy Apple Kugel

Ingredients

  • 9 granny smith apple -- peeled
  • 12 ounces apricot preserves
  • 1/2 cup sugar
  • 1/2 cup potato starch
  • 3 eggs
  • 3/4 cup oil
  • 1 teaspoon baking powder
  • Vanilla extract

Preparation

Step 1

Preheat oven to 350.

Slice apples very thin and place in 9x13 inch pan. Spread apricot preserves over apples. (You may need to heat the preserves to soften them.) Sprinkle with cinnamon.

Mix batter ingredients to form a batter. Spread over preserves. Bake, uncovered, 1 1/4 hours.
