Garlic Vinaigrette

Ingredients

  • 1 15 ounce can chick peas
  • 1 medium cucumber -- sliced and quartered
  • 1/2 cup sliced ripe olives
  • 1/3 cup chopped red onion
  • 1/4 cup minced fresh parsley
  • 3 Tablespoons oil
  • 3 Tablespoons red wine vinegar
  • 1 Tablespoon sugar
  • 1 Tablespoon fresh lemon juice
  • 2 cloves garlic -- minced
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Preparation

Step 1

Combine chick peas, cucumber, olives, onion, and parsley. Combine remaining ingredients and pour over vegetables. Serve immediately or chill up to 24 hours.
