Spinach Salad with Mandarin Orange Dressing

Ingredients

  • ORANGE DRESSING
  • 8 mandarin orange segments
  • 1/4 cup oil
  • 1 Tablespoon Plus 1 teaspoo sugar
  • 1/2 teaspoon salt
  • 2 Tablespoons balsamic or red wine vinegar
  • 2 or 3 dashes Tabasco sauce
  • Spinach
  • 1/4 cup sunflower seeds
  • 1 11 ounce can mandarin oranges -- (reserve 8 segments for dressing)
  • 1/2 red onion -- thinly sliced

Preparation

Step 1

To make dressing, in a food processor process orange segments. Add oil, sugar, salt, vinegar, and Tabasco sauce. Process until pureed. Dressing may be refrigerated for up to 4 days. Makes 1/2 cup.
