Apricot Sweet Potato Chicken

Ingredients

• 6 pieces chicken
• 4 sweet potatoes -- sliced 1/2" thick
• 4 Tablespoons apricot jam -- softened slightly
• 4 Tablespoons onion soup mix
• 3 Tablespoons brown sugar
• 1 1/2 Tablespoons orange juice
• 1 1/2 Tablespoons lemon juice
• 1 1/2 Tablespoons ketchup

Preparation

Step 1

Line baking pan with sweet potatoes. Place chicken on top. Mix jam, onion soup mix, brown sugar, juices and ketchup. Pour over chicken. Bake 1 1/2 hours, covered, 15 to 20 minutes uncovered.
