Ingredients
- 1/4 cup canola oil
- 9 Serrano peppers, chopped
- 9 large onion, pureed in vita-mix
- 9 cups apple butter
- 4 1/2 cups ketchup
- 9 cups yellow mustard
- 6 3/4 cups apple cider vinegar
- 3 cups molasses
- 3 cups Worcestershire sauce
- 2 1/4 cups brown sugar
- 1 1/8 cup chili powder
- 3 tablespoons black pepper
- 3 tablespoons white pepper
- 2 1/4 teaspoons cayenne
Preparation
Step 1
Heat oil in a sauce pan over medium-high heat. Puree the onion in Vita Mix. Add onion and chile to the oil, cook over medium heat for 3-4 minutes, or until onions turn translucent. Do not let onions brown. Add the spices and cook for 1 minute.
Add the apple butter, ketchup, mustard, vinegar, Worcestershire, molasses and the sugar. Mix well and let simmer. Season to taste with salt. If not spicy enough add more cayenne. If not sweet enough add more molasses.
Let the sauce cook down slowly until it thickens. Keep warm until ready to use or make ahead and reheat.
