  • 1 tablespoon extra-virgin olive oil
  • 1 red bell pepper, diced
  • 12 ounce package frozen white corn, thawed
  • 2 (15-ounce) cans black beans, rinsed
  • 6 cloves garlic, minced
  • 2 tablespoons lime juice
  • Chopped cilantro

Preparation

Step 1

In a large sauté pan add olive oil and cook corn, red pepper and garlic over medium-high heat. When corn and pepper are cooked al dente, and the beans, lime juice and cilantro; stir until hot.

This cooks quickly and should be done just before you are ready to serve.
