Cedar Plank Cod with Spanish Almond-Garlic Sauce

Soak cedar plank in water for 2-3 hours before using.

- 1 tablespoon oil
- 1/4 cup finely chopped onion
- 1 hot pepper, seeds removed, chopped fine
- 3 cloves garlic, chopped fine
- 2 tomatoes, peeled, seeded and chopped fine
- 12 whole blanched almonds
- 1/2 teaspoon salt
- 1/4 cup finely chopped fresh parsley
- Fish
- 2 (8 ounce) cod fillets

Step 1
Make sauce: Heat oil in large saucepan. Sauté onion and pepper in oil over medium heat for 10 minutes. Add garlic and cook for an additional 1-2 minutes, taking care that it doesn’t burn. Add tomatoes, heat to simmer and let cook 3-4 minutes.
Meanwhile, spread almonds in a baking dish in a single layer. Place in a 350°F oven for 10 minutes or until lightly browned. Grind in a blender until coarsely grated.
Add grated almonds to sauce along with salt. Stir well. Remove from heat and stir in parsley.
Heat grill to 400°F - 450°F. Sprinkle fillets with salt and freshly ground black pepper. Grill on cedar plank.
Transfer cod to serving platter. Spoon sauce over cod and serve immediately.
