Ingredients

  • Dressing:
  • 2 lbs. small red potatoes, cubed
  • 2 large sweet onions, cut in chunks
  • 1 red pepper, cut in strips
  • 2 slices bacon, quartered
  • 1/4 tsp. seasoned salt
  • 1/4 c. cider vinegar
  • 1/4 c. chicken broth
  • 2 Tbs. olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp. white pepper
  • 1/2 tsp. dry mustard
  • 1/4 tsp. dill
  • 1/2 tsp. salt

Preparation

Step 1

Place potatoes in large bowl; add 2 Tbs. water and cover with plastic wrap. Microwave 7-10 minutes until almost tender. (This step can also be done by boiling the potatoes on the stove.)

Place potatoes, onions, pepper, and bacon in a grill pan. Sprinkle with seasoned salt. Toss with a small amount of olive oil and grill until done.

Add dressing. Let stand 10 minutes before serving.
