Crabmeat, Portobello and Truffle Oil Pizza

Shrimp or scallops may be substituted for the crab. If they are uncooked they may need to bake a little longer.

Ingredients

  • Basic pizza dough for 2 large pizzas
  • 2 large Portobello mushrooms, thinly sliced or 8 to 16 oz. sliced baby bellas
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon each salt and white pepper
  • 1 pound lump crab-meat, picked over for shells
  • 1/4 cup mayonnaise
  • 1/4 cup minced green onions or chives
  • 2 tablespoons minced parsley
  • 1 teaspoon fresh lemon or lime juice
  • 1/4 teaspoon cayenne pepper
  • 16 ounces grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • truffle oil to taste
  • Chopped fresh chives for garnish

Directions:

Place baking stone on lower rack of oven and preheat to 475°F for 20 minutes.

Remove dough from bowl and knead briefly. Place on lightly floured work surface and let rest 10 minutes. Shape into two pizzas and place on aluminum foil sprayed with Pam.

In a small bowl, toss mushroom slices with olive oil, garlic, salt and pepper.

In another bowl, toss crab-meat with the mayonnaise, green onions, parsley, lemon juice, cayenne and a pinch of salt, being careful not to break up the lumps. Adjust seasonings.

Sprinkle mozzarella evenly over pizza, leaving a ¾ inch border. Arrange mushroom slices over the cheese. Transfer to the baking stone and cook until crust starts to turn golden brown (about 6 minutes). Carefully remove from the oven and arrange crab-meat over pizza and sprinkle with Parmesan. Return to oven and bake until crab-meat is hot (about 3 minutes).

Remove from oven and drizzle with truffle oil. Garnish with chives.
