Ingredients
- 8 eggs
- 1/2 cup milk
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons butter
- 4 cloves fresh garlic, minced
- 1/2 cup onion, chopped
- 4 ounces kielbasa, chopped
- 4 potatoes, shredded
- 4 ounces shredded Cheddar cheese
Preparation
Step 1
1. Beat together the eggs, milk and Parmesan cheese; set aside.
2. In a large skillet over medium-high heat, melt butter and sauté garlic, onion, sausage and potatoes for about 3 minutes or until tender.
3. Reduce heat to medium. Pour egg mixture into pan and cook, without stirring, until eggs are almost set. Sprinkle Cheddar cheese over top of frittata. Let cook for about 1 more minute.
4. Place pan under broiler and broil about 6 inches from heat until top is bubbly and slightly browned. Cut into wedges and serve.
Notes: A misleading name, given that it's filled with smoked sausage, potatoes, and cheese. I've had it in my files for months and had some kielbasa to use up, so wanted to give it a try. It was really very good and very easy, as frittatas are. A good choice for brunch, although we had it as a weeknight dinner. Used half eggbeaters and half eggs, cut down the parmesan a bit and increased the sausage and ion and potatoes a bit. Next time would add some veggies - mushrooms, peppers, broccoli, anything would probably work great.
