Ingredients
- 15 ounces ricotta cheese
- 1 cup chunky salsa
- 10 ounces frozen spinach -- thawed and sqeezed dry
- 8 ounces mozzarella cheese -- divided
- 8 flour tortillas -- (8 inch) divided
Preparation
Step 1
Spray a 9 inch deep dish pie plate with cooking spray.
Mix ricotta cheese, salsa, spinach, and 1 cup of the cheese until well blended.
Layer tortillas, 1/2 cup of the cheese mixture and repeat layers until all ingredients are used.
Bake at 375 for 20 minutes. Sprinkle with remaining mozzarella cheese. Bake another 5 minutes.
