Spinach With Tomatoes

Ingredients

  • 1 large package fresh spinach, wilted
  • 1 small onion, diced
  • 1-2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1-2 cups vegetable broth
  • 1-2 teaspoons balsamic venagar to taste
  • 1/2 can chopped tomatoes

Preparation

Step 1

1. In a large saucepan, add olive oil and heat for 1-2 minutes. Add garlic and onion; saute for 2 minutes.
2. Add vegetable broth and simmer for 3-4 minutes or until cooked through.
3. Stir in vinegar and chopped tomatoes. Simmer for 2-3 minutes.
4. Add in wilted spinach. Stir and turn off heat.
5. Searve over couscous or rice.
