Ingredients

  • Frosting:
  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 (15 oz) can pumpkin
  • 2 cups flour
  • 2 tp baking powder
  • 1 tp baking soda
  • 1/2 tp salt
  • 2 tp cinnamon
  • 1/2 tp ginger
  • 1/2 tp cloves
  • 1/2 tp nutmeg
  • 1 (6 oz) package cream cheese
  • 3/4 stick butter
  • 1 tb cream or milk
  • 1 tp vanilla
  • 4 cups powdered sugar

Preparation

Step 1

Mix first 4 ingredients in a large bowl.

Sift remaining ingredients and add to pumpkin mixture. Mix well and pour into greased and floured 12 x 18 x 1 inch pan. Bake at 350˚F for 25-30 minutes.

Frosting:
Beat cheese, butter, vanilla and cream together until soft. Add powdered sugar until correct consistency to spread. Cut into 2 x 3 inch bars. Note: bars freeze well.
