Ingredients
- 1 cup corn kernels, can be frozen
- 3 tablespoons minced red onion
- 1/2 teaspoon cumin
- 1 teaspoon minced jalapeno
- 2 garlic cloves, minced
- 2 teaspoons canola oil
- 1 avocado, cubed
- 1 tomato, chopped
- 3 tablespoons lime juice
- 2 teaspoons cider vinegar
- 2 tablespoons cilantro
- salt and pepper
Preparation
Step 1
1. Heat broiler.
2. Toss corn, onion, cumin, chile, garlic and oil on jellyroll pan. Roast until golden, stirring every few minutes, about 10 minutes total. Remove from pan and cool.
3. Toss avocado-cilantro. Add corn, season.
