SWISS CORN BAKE

Ingredients

  • 3 cups fresh cut corn or 16 oz. package frozen corn
  • 2 beaten eggs
  • 1-1/2 cups shredded Swiss cheese (6 oz.)
  • 2- 5 oz. cans (1-1/3 cup) evaporated milk
  • 1/4 cup finely chopped onion
  • 1/4 to 1/2 teaspoon salt
  • Dash pepper
  • 1/4 cup soft whole wheat or white bread crumbs (1 slice)
  • 2 tablespoons margarine or butter melted
  • Red sweet pepper rings (optional)

Preparation

Step 1

If using fresh corn, cut corn, cook in medium sauce pan in 1-1/2 cups boiling water 5-8 minutes or until crisp tender, drain. If using frozen corn cook according to package directions, drain.

In medium bowl combine eggs, 1 cup Swiss cheese, evaporated milk, onion, salt and pepper. Stir in cooked, drained corn. Turn mixture into 8" round baking dish. Place dish on a baking sheet. Bake in 350 degree oven for 20 minutes. Toss bread crumbs with remaining cheese and margarine or butter, sprinkle the mixture in a ring over the corn mixture. Bake 5-10 minutes more or until golden and bubbly. Let stand 5 minutes. Top with sweet pepper rings.
