Ingredients
- 2 (12 ounce) mahimahi fillets
- 1/4 cup lime juice
- 1 tablespoon honey
- 1 clove minced garlic
- 1/8 inch thick slice peeled gingerroot
- Vegetable cooking spray

Step 1
Cut each fillet into 2 pieces and place fish in a shallow baking dish. Combine lime juice and next three ingredients in a small bowl; stir well and pour over fish. Cover and marinate in refrigerator for 1 hour.
Remove fish from marinade, reserving marinade. Remove and discard gingerroot. Bring marinade to a boil in a small saucepan; set aside.
Coat grill rack will cooking spray. Place fish on grill over medium-hot coals (350° to 400°F). Place fish on rack and grill uncovered, 8 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with marinade.
