Flounder with Caper Wine Sauce

Ingredients

  • 1/2 cup plus 1 tablespoon dry white wine
  • 2 teaspoons lemon zest
  • 1/3 cup fresh lemon or lime juice
  • 1 teaspoon dried Italian seasoning
  • 4 (6 ounce) flounder fillets

  • WINE SAUCE
  • Olive oil cooking spray
  • 2 cloves minced garlic
  • 1 teaspoon all-purpose flour
  • 1/3 cup dry white wine
  • 2 tablespoons fresh lemon or lime juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon capers
  • 1 tablespoon grated Parmigiano-Reggiano

Preparation

Step 1

Combine first four ingredients in a large zip-top plastic bag. Add fillets; seal and shake until fish is well coated. Marinate in refrigerator for 30 minutes.

Coat a small saucepan with cooking spray; place over medium heat and add garlic; sauté for 15 seconds. Add flour and cook, stirring constantly with a wire whisk for 1 minute. Gradually add 1/3 cup wine and 2 tablespoons lemon juice. Cook and stir for 2 minutes more until thickened and bubbly. Stir in parsley and capers. Set aside and keep warm.

Remove fih from marinade; discard marinade. Place fish on rack of a broiler pan coated with cooking spray. Broil 5 ½ inches from heat for 2 minutes. Prinkle fish with cheese and broil 2 minutes or until fish flakes easily when tested with a fork. Serve with wine sauce.
