Carrot Cake with Pecan Frosting

Ingredients
- 1 c crisco
- 2 c sugar
- 4 eggs
- 1 CAN 8OZ UNSWEETENED CRUSHED Pineapple, undrained
- 2 1/1 x flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3 c shredded carrots(about 6)
- FROSTING
- 8 oz cream cheese
- 1/2 c butter, softened
- 1 tsp vanilla
- 3 3/4 p sugar
- 1 c chopped pecans

Preparation
Step 1
Preheat to 325
Line 9x13 parchment paper and grease
cream crisco and sugar until fluffy
Add eggs one at a time, beating after each one
Beat in pineapple=
Mix dry ingredients and gradually add to creamed mixture.
Stir in carrots
Bake 4 0-45
Cool
Mix frosting ingredients
Stir in pecans
Refrugerate
