Ingredients

  • 1 c crisco
  • 2 c sugar
  • 4 eggs
  • 1 CAN 8OZ UNSWEETENED CRUSHED Pineapple, undrained
  • 2 1/1 x flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 c shredded carrots(about 6)
  • FROSTING
  • 8 oz cream cheese
  • 1/2 c butter, softened
  • 1 tsp vanilla
  • 3 3/4 p sugar
  • 1 c chopped pecans

Preparation

Step 1

Preheat to 325
Line 9x13 parchment paper and grease
cream crisco and sugar until fluffy
Add eggs one at a time, beating after each one
Beat in pineapple=
Mix dry ingredients and gradually add to creamed mixture.
Stir in carrots

Bake 4 0-45
Cool
Mix frosting ingredients

Stir in pecans
Refrugerate
