CREAM OF CHICKEN SOUP

I remember eating this as a kid and had to try to re-create it. Although as a kid, it was Campbells made with milk.
Ingredients
- 1 stick unsalted butter
- 1 medium Spanish or Sweet Onion, chopped
- 2 stalks celery (with leaves) chopped
- 3 carrots, chopped
- 3/4 cup flour
- 7 cups Low Sodium Chicken Broth
- Bouquet Garni (3 sprigs rosemary, 3 sprigs thyme, 1 bayleaf) tied together with string
- 3 cups cooked and diced chicken
- 1/2 cup half & half
- 3 tsp dry sherry
- Salt & Pepper

Preparation
Step 1
Melt butter in soup pot over medium heat. Add onion, celery and carrots & cook stirring occasionally until soft (around 15 min). Add flour and cook, stirring for around 2 minutes.
Wisking constantly in broth and bring to a boil. Throw in the bouquet garni. Lower the heat and simmer around 15 minutes.
Stir in chicken and bring to a boil. Bring down to simmer and add the half & half and sherry. Remove the bouquet garni. Salt & pepper to taste and continue to simmer around 20 minutes more.
Note: I also added around ½ cup frozen corn after adding the broth for added veggies.
Feel free to add anything you like. Still tastes great!
