Cajun Fish Parmesan with Pasta

Ingredients
- 56 ounces canned chunky stewed tomatoes
- 1 tablespoon dried oregano
- 1 egg, beaten
- 1 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- Cajun spice
- 1 pound flounder or orange roughy
- Olive oil spray
- 16 ounces spaghetti, cooked

Preparation
Step 1
Prepare pasta according to package directions.
Bring tomatoes and oregano to a simmer in saucepan over medium heat; add cooked pasta and keep warm.
Combine bread crumbs and Parmesan cheese on a dinner plate. Dip fish in egg, shake off excess, then in crumbs.
Spray oil in large non-stick skillet and heat over medium-high heat. Add fish, sprinkle with Cajun spice, cook about 5 minutes, turn and repeat.
Serve over pasta.
