Gingerbread People

An easy to roll and tasty gingerbread recipe. Perfect for the Christmas holiday.
Ingredients
- 2 1/2 cups flour
- 1 tbsp ground ginger
- 1 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup packed dark brown sugar
- 1/2 cup butter, softened
- 1/4 cup golden cane syrup (such as Lyle's Golden Syrup)
- 2 tbsp molasses
- 1 large egg
Preparation
Step 1
Preheat oven to 350 degrees F or 175 degrees C.
Place brown sugar and butter in a bowl, and beat with a mixer at medium speed for 2 minutes or until light and fluffy. Add syrup, molasses and egg, and beat 1 minute more. Lightly spoon flour into cups, level with a knife and add, along with ginger, baking soda, cinnamon and salt. Beat on low for 1 minute or until just combined.
Gently press mixture into a disc, wrap in plastic wrap and chill for 30 minutes.
Divide dough in half. Roll each portion to 1/8-inch thickness on a lightly floured surface. Cut with cutters to form shapes. Reroll scraps, as necessary. Place cookies 1 inch apart on a baking sheet covered with parchment paper. Bake for 8 minutes or until lightly browned. Let cool on baking sheet for a few minutes, then remove to cool completely on a wire rack.
Decorate, if desired.
