Ingredients
- 1/4 lb beef
- 1/2 c each green and red pepper, chopped
- 1/2 c shredded cheddar
- 2 tbs chopped cilantro
- 3/4 c salsa, divided
- 4 corn tortillas

Preparation
Step 1
Brown meat with peppers. Stir in 1/4 c salsa, simmer 5 mins. Remove from heat. Stir in 1/4 c cheese. Spread remaining salsa into 9" pan. Wrap each tortilla in waxed paper and microwave on high 10 sec. Spoon 1/3 c meat mixture down center each tortilla, roll up. Place seam side down. Top with remaining salsa cover. Bake 20 mins. top with remaining cheese. Bake uncovered 2-3 mins. Top with cilantro
