Ingredients

    lb margarine

  • 2

    c sugar

  • 3

    eggs

  • 1

    lb ricotta cheese

  • 1

    tsp vanilla

  • 4

    cups sifted flour

  • 1

    tsp baking soda

  • 1

    tsp salt

Directions

Cream together margarine, sugar and eggs Add ricotta vanilla and beat well Add sifted flour, baking soda, salt and blend well. Drop by teasponful onto a lightly greased pan and bake at 350 degrees for 12 to 15 minutes. Cool and frost with a conventional confectionary sugar icing. Sprinkle with coconut. If desired - you may sprinkle the tops with nutmeg or cinnamon before baking.
