Veggie Chili

Ingredients

  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 clove garlic, crushed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 stalk celery, chopped
  • 1 chipoltle pepper
  • 1 can chili beans (15 oz)
  • 1 can diced tomatoes
  • 1 cup lentils and/or Boca Crumbles
  • 1 cup tomato juice
  • 4 cups water or stock
  • Italian seasoning

Preparation

Step 1

Saute onion, carrot, celery, and green pepper in olive oil until soft. Add garlic, chili powder, cumin, chipotle, Italian seasoning and Boca Crumbles. Cook a few minute smore until crumbles are heated through. Add tomato juice, canned tomatoes, stock, and lentils. Bring to a boil and then reduce heat and simmer about 45 minutes until lentils are soft. Add beans and heat about another 15 minutes. Serve over brown rice for a change and top with chopped cilantro, onions, and cheese.
