Ingredients

    lbs flounder filets

  • 1

    3oz chopped mushroom can

  • 1/4

    cup chopped onion

  • 3/4

    cup butter

  • 7

    oz can of crabmeat

  • 1/2

    cup crushed saltines

  • 2

    tablespoons parsley

  • 1/2

    teaspoon salt

  • dash pepper

  • Sauce:

  • 3

    tablespoons butter

  • 1/2

    cup wine

  • paparika

  • 3

    tablespoons flour

  • milk

  • 1

    cup swiss cheese

Directions

Drain the mushrooms. Reserve the liquid. Cook onion in 1/4 cup butter for 3 minutes. Add mushroom, crab, crackers, parsely, salt and pepper. Spread filling- fold, then roll. Melt 3 tablespoons margarine. Add flour and salt. Add enough milk to mushroom liquid to make 1 and 1/2 cups of liquid. Add liquid with the wine to saucepan. Cook and stir until thick. Pour over flounder. Bake uncovered 400 degrees for 30 minutes. Sprinkle with cheese and paprika. Bake 5 minutes.
