Ingredients

  • 4 Old El Paso™ flour tortillas for burritos (8 inch)
  • 1 cup pizza sauce
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan
  • 36-48 mini pepperonis

Preheat oven to 425 degrees F. Lightly oil a 12-cup muffin tin or coat with nonstick spray.

Fit a tortilla circle into each of 12 muffin tins, pressing carefully to make sure there is an opening in the center. Scoop 1 tablespoon pizza sauce into each muffin tin. Sprinkle with mozzarella and Parmesan cheeses, topping with 3 mini pepperonis each.

Place into oven and bake for 10-12 minutes, or until cheese has melted.

These sound so easy and fast! What do you mean by “pressing carefully to make sure there is an opening in the center”??

Exactly that! You need to make sure there is an opening big enough for your toppings.

She means make sure there is a cup in the tortilla. I am wondering about the deep dish part. and three pepperonis on each pizza. I count 5.

Susan, you can add 3, 5 or 10 mini pepperonis! I wrote 3 in the recipe as a general rule of thumb but sometimes you can cheat a little and add more. As for the deep dish – because everything is held in a “cup”, you have a nice deep dish pizza with all that goodness nestled right in there. Hope that answers your questions!

I have to make these, the can you show at the top is old El Paso Enchilada sauce, but it says Pizza sauce below witch one do you use ? they both have a very different flavor.

Could corn tortilla’s be used to make this be gluten free?

Lisa, I was able to find it at my local grocery store. I recommend calling ahead to make sure your grocery store has it in stock.

Unfortunately I cannot answer this with certainty as I have never tried doing this myself. I recommend using your best judgement for freezing and reheating.

I am OBSESSED with this! I cant wait to make these on Monday for the NY Giants game.

These would make a wonderful school snack for the kiddos.

I made this today with my 4 year old daughter. It was so easy she did most of the work and it was delicious. We added a sprinkle of parsley for a little color. Thanks for another flavorful and easy meal.
