Ingredients
- 4 tbsp. butter, melted
- 2 tbsp. cocoa powder
- 1 sleeve graham crackers, crushed
- 1 lb. cream cheese
- 1/2 cup granulated sugar
- 2 tbsp. flour
- 4 eggs, large
- 1 cup sour cream
- 1/2 tsp. vanilla extract
- 8 oz. good quality white chocolate chips
- 2 cups warm water
Preparation
Step 1
1. To make the crust, use a food processor to crush the graham crackers with the cocoa powder. Add the melted butter. Form the crust in the 7-inch spring form pan by pressing the bottom and the sides. Set aside.
2. In the bowl of a mixer fitted with the whisk attachment, combine the cream cheese, sugar and flour. Whisk the mixture together on medium speed until it is thoroughly combined for about 2 minutes. Add the eggs one at a time into the mixture until they are completely incorporated. Add the sour cream and vanilla. Beat the mixture until smooth for about
1 minute.
3. Place the chocolate chips in a microwave safe bowl. Melt the chips in the microwave on high for 1 minute. Stir and cook them until they are completely melted. Combine the melted chocolate with the cream cheese mixture and beat the mixture until it is smooth for about
1 minute.
4. Pour the filling into the prepared crust. Cover the baking dish with foil.
5. Place the Inner Pot in the Cooker. Set the Wire Rack in the cooker. Pour 2 cups of warm water into the pot of the cooker.
Optional: add few drops of vanilla extract to the water to infuse cake with vanilla flavor.
6. Place the Inner Pot in the cooker. Place the pan on the rack in the cooker. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed. Set the PRESSURE ADJUST to 60. Set the COOK TIME to 20 minutes.
7. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Valve to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
8. Carefully remove the pan from the cooker. Cheesecake should be firm around the edges and loose in the center. Chill in the refrigerator. Unlatch the spring form pan sides and carefully remove the rim before serving.
