Ingredients

    ounce can refried beans

  • 1

    cup corn kernels

  • 1/2

    cup salsa

  • 9

    (6 inch) tortillas

  • 8

    ounces shredded cheddar cheese

  • 1

    teaspoon chili powder

  • 3

    tomatoes, chopped

  • 1

    avocado, peeled and chopped

  • 1

    teaspoon ground cumin

  • Juice of 1 lime

  • Salt and pepper, to taste

Directions

Toss together chili powder, tomatoes, avocado and cumin. Sprinkle mixture with lime juice and season with salt and pepper. Combine beans, corn and salsa and microwave until hot. Stir in cheese. Place a tortilla flat on work surface. Spread ¾ cup beans and cheese mixture on one half of tortilla; fold over to encase filling. Repeat with remaining ingredients. Spray non-stick griddle with cooking spray and heat to medium heat. Put quesadillas on griddle and cook until browned on one side; turn and brown. Remove to serving plate. Spoon tomato-avocado mixture over and serve.
